Welcome to Gnocchi on Thursday

All around Rome there is a tradition of serving gnocchi on Thursdays. No one seems to know when or why it started but it has caught on and every restaurant serves a special gnocchi dish on Thursday.

I am starting a tradition here on my blog of also making gnocchi on Thursday. I want to take it one step further and make gnocchi that Diabetics can eat without worry.
Everyone can make gnocchi. You need no special kitchen equipment, just your hands, and you can use nut, grain and cheese to make them. All things that are wonderful for maintaining an acceptable glucose level.

I am going to explore the world of gluten-free flours, along with nut meals and cornmeals and vegetable purees. Using fruit purees for dessert gnocchi and all kinds of spices and herbs.
